Hello everyone !!Today we are going to share the recipe of beetroot dates pickle which is sweet, spicy and tangy bursting with flavours all at the same time.It pairs very well with biriyanis.

Ingredients:
- Beetroot -1 medium sized
- Dates - 1 cup
- Ginger – small piece
- Garlic –1 clove
- Salt –as required
- Sugar -1/2 tablespoon
- Coconut oil – 2 tablespoon
- Curry leaves
- Vinegar -1/2 cup
- Mustard – 1/2 teaspoon
- Green chilli – one no
Directions:
1.In a blender grind beetroot dates and vinegar
2.Add green chilli ,sugar and salt to the grinder and blend it into a smooth
paste
3.Take a kadai heat oil and splutter mustard seeds
4.Add curry leaves ,crushed ginger garlic and saute for one minute
5.Pour the previously prepared mixture to the oil and sauté it till the raw
smell of beetroot goes.
7.If the mixture is too thick loosen it by adding some more vinegar
8.Let it cool down completely and you can then transfer into airtight
container.
9.Our beetroot dates pickle is ready
