Hello everyone!! We are again back with a recipe of simple vegetable soup!!! 
This is an excellent soup when you are on a diet and want to avoid few calories.You can also serve this as on appetizer.This soup can be prepared ahead of time and refrigerated.

Ingredients:

  • Mixed Vegetables(I used cabbage,capsicum,beans,carrot)- 3 cups chopped finely
  • Oil - 1 tblsp
  • Garlic - 3 cloves chopped finely
  • Spring Onion White - 2 chopped finely
  • Salt to taste
  • Pepper to taste
  • Cornflour - 1 tblsp
  • Water or veggie stock - 4 to 5 cups
  • Green Peas (fresh or frozen) – 1/4 cup
  • sweet corn-1/4 cup

Instructions:

  1. Heat oil in a sauce pan, add garlic, spring onion and saute for a min.
  2. Add in veggies,green peas,sweet corn and saute for 5 mins till it is done.
  3. Add in water and bring it to a boil.
  4. Cook for 10 mins.
  5. Add salt and pepper to taste
  6. Add in cornflour which is mixed with some water into it and mix well.
  7. Serve hot.
